Spinach Egg Curry / Palak Anda Curry



Palak Egg / Spinach Egg Curry Recipe is an Indian style curry of eggs boiled in a spinach gravy.

I had a bunch of palak leaves and was going to make kole palak but decided to try this gravy which turned out delicious.

I love the green color of this gravy

For curry:
1 cup chopped banana leaves
3 cups of water
1 tablespoon of ghee
1 tsp
1/2 teaspoon cumin seeds
2/3 cup chopped onion
2/3 cup chopped tomatoes
1 tablespoon ginger garlic paste
2/3 cup water
Salt to taste
1/2 teaspoon red chili powder
4/te spoon of turmeric powder
1/2 teaspoons hot spices
2 tablespoons cream
For the fried eggs:
3-4 eggs, boiled
1 tbsp ghee
4/tsp red chili powder
2 teaspoons of salt
1/2 teaspoon cumin seeds
Boil the eggs and remove the shell from the boiled eggs and keep aside
Wash the spinach leaves and then blanch the washed spinach leaves

Bring enough water to boil in a pan to blanch the spinach Add the leaves to the boiling water and let it boil for a minute Then remove from heat and plunge the leaves into ice cold water Keep it for two minutes Drain the water
Pureed Blanched Spinach with Green Chili and Ginger
Meanwhile finely chop the onion, tomato and garlic
Heat oil in a pan Add cinnamon, dry red chillies (if you are adding them) and cumin seeds.
When the cumin seeds change colour, add chopped onion and garlic
Fry the onion until it turns light brown
Now add the chopped tomatoes and saute until soft
Add salt, turmeric powder, coriander powder and hot masala powder
Mix well and fry for few seconds
Then add pureed spinach with 1/2 cup water
Let it cook for two minutes
Make a 2-3-sl slice on top of each poached egg Slide the eggs into the gravy
Allow the gravy to simmer for 5-6 minutes and remove from heat
  1. Palak anda gravy is ready to be served with rotis, naan or rice.
